Amelia’s Sweet Potato Casserole

Amelia’s Sweet Potato Casserole
4 large or 6 medium sweet potatoes
1 tsp. Vanilla
⅓ cup milk (I love using the Oatley milk!)
½ cup melted margarine (Miyokos butter works perfect for this recipe)
¼ tsp. Cinnamon

⅔ cup lightly packed brown sugar
⅔ cup chopped pecans
4 tbsp. Flour
4 tbsp. Margarine

Peel, cube, and boil sweet potatoes until tender. Drain the potatoes. When cool blend with vanilla, milk, margarine, cinnamon until smooth. Pour the mixture into a greased 9x13 dish.
For the topping mix brown sugar, pecans, flour and margarine together then sprinkle over sweet potato mixture.
Bake at 350 for 30 minutes, cool, serve and enjoy!
