Spring Greens
- 1 bunch scallions, sliced
- 1 clove garlic, minced
- 1 T. (veggie) butter
- ˝ grapefruit, peeled & skinned
- red pepper flakes to taste
- 2 oz. (veggie) cheese
- 1 bunch greens of choice, torn
Sauté scallions & garlic in butter over
medium-low heat until translucent.
Add remaining ingredients & sauté
until greens are tender. Serve.
