Spring Greens

1 bunch scallions, sliced
1 clove garlic, minced
1 T. (veggie) butter
˝ grapefruit, peeled & skinned
red pepper flakes to taste
2 oz. (veggie) cheese
1 bunch greens of choice, torn

Sauté scallions & garlic in butter over medium-low heat until translucent. Add remaining ingredients & sauté until greens are tender. Serve.
