Curried Squash & Apple Stew

1 onion, chopped
1 T. olive oil
3 tart apples, cored and chopped
2 - 3 cups squash of choice, cooked
3 - 4 cups vegetable stock
2 tsp. fresh grated ginger
1 1/2 tsp. Garam masala
1 1/2 tsp. curry powder
sea salt to taste
cinnamon powder

Saute onion in oil over low/medium heat until soft. Add apples, squash, and stock - simmer until tender, about 30 minutes.

Add spices, letting your taste buds be your guide. Simmer another 15 minutes then puree.

Garnish with generous shakes of cinnnamon.
