Cranberry Yams
- 3 medium yams, peeled and cubed
- 1 cup fresh or frozen cranberries
- 1/2 cup raisins
- 1 cup (soy or rice) milk
- 1 cinnamon stick
- 1/4 cup honey
- 3 T sucanat
- 1 tsp ground nutmeg
Heat oven to 350 F. Toss yams, cranberries, and raisins in a 3 1/2 quart casserole. Simmer soymilk, honey, and cinnamon stick for 5 minutes in a saucepan and pour over yam mixture. Sprinkle with sucanat and nutmeg. Cover and bake 1 1/2 hours, stirring a few times during baking.
