Broccoli Salad
- 2 - 3 stalks broccoli
- 1 1/2 cups vegan mayonaisse
- 1/4 cup apple cider vinegar
- 1/4 cup sweetener of choice
- 1/4 cup pine nuts
- 1/4 cup raisins
- soy bacon bits
Chop broccoli into bite-sized pieces (peeling the stalks as necessary). Toss with mayo, vinegar, sweetener and pine nuts.
Chill at least two hours. Before serving mix in raisins and top with soy bacon bits.
