Perfect Tofu Salad
- ¾ cup raw soybeans
- ¾ cup raw wheat berries
- salt and pepper
- 1 t fresh dill (or ½ t dried)
- ¼ t dry mustard
- ½ cup cider vinegar
- ½ cup mayonnaise
- juice of 1 lemon or lime (or combination)
- dash of dried basil
- 2 T dry white wine
- ½ cup freshly chopped parsley
- 2 cloves crushed garlic
- 1 scallion
- 1 scallion
- 1 cucumber
- 1 red onion
- 1 bell pepper
- 1 stalk of celery
- 1 tomato
Cook until tender the raw soybeans and the raw wheat berries. Marinate and chill the combination in salt and pepper to taste, dill, mustard, cider vinegar, mayonnaise, lemon or lime juice, dash of dried basil, dry white wine, chopped parsley, and crushed garlic. While beans and berries are marinating and chilling, dice together the scallion, carrot, cucumber, red onion, bell pepper, and stalk of celery. Add veggies to salad, mix gently, and serve. Garnish with fresh chopped tomato.
