Baked Tofu

1 lb firm or extra-firm water packed tofu
Marinade:
1/3 - ½ cup mild soy sauce or Bragg’s Liquid Aminos
1 tsp sweetner of choice
1 tsp – 1 T spice mixture of choice

Drain tofu & press between clean (paper or cloth) towels for at least 10 minutes to soak off excess moisture. Cut tofu evenly into thick slices. Whisk together soy sauce, sweetner, & spices of choice. Marinate tofu slices in a single layer in this mixture & place in the fridge for at least an hour or overnight. Remove tofu from marinade, place in a lightly oiled baking pan & bake at 350 F for 40 minutes, basting occasionally with left over marinade. Turn carefully & bake 20 minutes more. Serve immediately in salads, sandwiches, over rice or pasta, or diced with veggies – or – cool & refrigerate & use as needed in recipes or just enjoy it plain.

Sweet & Sour: Add 2 tsp sugar, 1 T crushed pineapple, 1 T vinegar & ½ tsp. each: minced fresh garlic & ginger (or ¼ tsp each dried garlic & ginger) to marinade mixture.

Hawaiian: Add 2 tsp brown sugar & ¼ cup crushed pineapple to marinade mixture.

BBQ: Add ¼ cup of your favorite barbecue sauce to marinade mixture.
