Tofu Roast

Preheat the oven to 350 F.

Combine and set aside:
1 cup fresh whole wheat bread crumbs
1/3 cup vegetarian (chicken-flavored) broth
Saute over low/medium heat:
2 large onions, minced
2 - 4 large cloves garlic, minced
2 T. olive oil
When onions are soft and golden remove from heat and add:
1 1/2 lbs. frozen firm or extra-firm tofu, thawed, squeezed, and crumbled
1/4 cup soy sauce
1/2 cup tomato paste
1/2 tsp. dried basil
1/2 tsp. dried sage
1/2 tsp. dried oregano
1/4 tsp. dried thyme
1/4 tsp. dried savory
fresh ground black pepper to taste
the bread crumb mixture listed above
Mix in:
1/4 cup vital wheat gluten

Pat the mixture into an oiled 9-inch round cake or pie pan and brush the top with a thin layer of ketchup. Bake for 30 minutes, then let sit for 10-15 minutes before slicing into wedges.
