Tofu Roast
Preheat the oven to 350 F.
- Combine and set aside:
- 1 cup fresh whole wheat bread crumbs
- 1/3 cup vegetarian (chicken-flavored) broth

- Saute over low/medium heat:
- 2 large onions, minced
- 2 - 4 large cloves garlic, minced
- 2 T. olive oil

- When onions are soft and golden remove from heat and add:
- 1 1/2 lbs. frozen firm or extra-firm tofu, thawed, squeezed, and crumbled
- 1/4 cup soy sauce
- 1/2 cup tomato paste
- 1/2 tsp. dried basil
- 1/2 tsp. dried sage
- 1/2 tsp. dried oregano
- 1/4 tsp. dried thyme
- 1/4 tsp. dried savory
- fresh ground black pepper to taste
- the bread crumb mixture listed above

- Mix in:
- 1/4 cup vital wheat gluten
Pat the mixture into an oiled 9-inch round cake or pie pan and brush the top with a thin layer of ketchup. Bake for 30 minutes, then let sit for 10-15 minutes before slicing into wedges.
