Tofu, Noodles & Greens Salad with Peanut Sauce
- 1 lb. firm tofu, pressed and cubed
- 1 lb. spaghetti noodles
- mixed salad greens

- Dressing:
- 1/2 cup peanut butter
- 3 T tamari soy sauce
- 4 tsp apple cider vinegar
- 2 or more cloves garlic, pressed
- 1 T grated fresh ginger root
- 1 T sweetener of choice
- 1/2 tsp. crushed red pepper
- water to thin to desired consistency
Cook noodles and rinse with cool water. Whisk dressing ingredients and pour over noodles and cubed tofu. Serve over a bed of mixed salad greens. Serves 8.
