Sweet & Sour Tofu
- 2 lbs. firm tofu, cubed
- 2 tsp. sesame oil
- 3 T vegetable broth
- 2 green bell peppers, sliced
- 1 carrot, sliced
- 2 cups cooked brown rice
Saute tofu in oil and broth until browned. Add peppers and carrots and saute a few minutes more. Add sweet and sour sauce ingredients and simmer 5 minutes. Serve hot over brown rice. Serves 4 - 6.
