Brown Gravy
- 2 1/2 T soy margarine or spread
- 1/4 cup unbleached white flour
- 1 1/2 cup vegetable broth
- 2 T soy sauce or Braggs Liquid Aminos
- 1/4 tsp. freshly ground black pepper
- 1/4 cup fresh parsley, chopped
Melt margarine in a sauce pan over medium-low heat. Add flour and whisk together about 30 seconds; add broth slowly while whisking and simmer for 2 minutes. Add soy sauce and pepper. Simmer a few minutes more, remove from heat and stir in parsley.
