Spinach Noodles with White Sauce

4 T soy margarine
4 T unbleached white flour
¼ t sea salt
¼ t freshly ground black pepper
1 cup soy milk
¾ lb. spinach noodles

Heat a large pot of water to boiling to cook the noodles. In a heavy saucepan or skillet, melt the margarine over low heat. Blend in flour until mixture is smooth and bubbly. Slowly add milk, stirring constantly. Bring to boil, reduce to simmer, and cook until thick, about ten minutes. Add salt and pepper during thickening. While making sauce, cook noodles until tender. Drain, and top with white sauce.
