Quinoa Pasta Prima Vera
- 2 quarts water
- 1 red onion, chopped; 2 cloves garlic, minced
- 1˝ cup white wine T olive oil
- 3 T chopped fresh basil
- 1 t sea salt
- 1 bunch asparagus, trimmed and cut into bite-size pieces
- 1 red bell pepper, cut in strips1 cup snap peas, trimmed
- 1 bunch Swiss chard, trimmed and chopped
- 1 lb. quinoa pasta
Start boiling water for pasta. In a medium saucepan or skillet, sauté the onion and garlic in olive oil for 5 minutes. Add the wine, basil, sea salt, and the remaining veggies and cook on medium heat for 10-15 minutes, until the veggies are just soft. Meanwhile, cook pasta. When it's ready, drain it, add to veggies, and cook for 5 more minutes. Serve hot.
