Quinoa Salad
- Cook 1 cup quinoa according to directions
- 1 cup currants
- ½ cup pine nuts
- ¼ cu1 bunch chopped scallionsp chopped parsley
- 1 chopped red pepper

- Mix together:
- ¼ cup honey
- ¼ cup olive oil
- ½ T lemon juice
- 1 clove chopped garlic (more to taste)
- ¼ t cumin
- salt and pepper to taste (optional)
Combine first six ingredients. Pour dressing over and mix to coat.
