Quinoa Salad

Cook 1 cup quinoa according to directions
1 cup currants
½ cup pine nuts
¼ cu1 bunch chopped scallionsp chopped parsley
1 chopped red pepper
 
Mix together:
¼ cup honey
¼ cup olive oil
½ T lemon juice
1 clove chopped garlic (more to taste)
¼ t cumin
salt and pepper to taste (optional)

Combine first six ingredients. Pour dressing over and mix to coat.
