Millet-Vegetable Pilaf with Almond Orange Sauce

½ lb. sliced mushrooms
3 medium leeks or 2 medium onions, chopped
2 1 t saltT oil or margarine
2 cups raw millet
2 cups boiling water
1 large carrot, diced or sliced
½ lb. Green beans, cut in 1 ½ " pieces
1 cup toasted sunflower seeds

Saute mushrooms and leeks (or onions) in oil (or margarine) with salt for 5 min. on medium heat. Add millet and continue cooking for 5 minutes, stirring often. Add boiling water, cover, and continue cooking. 5 minutes later add carrots and green beans-just layer them on top; don't mix in. Reduce heat, cover, and cook, undisturbed, for 15 minutes. Remove from heat, fluff with fork, mixing in carrots and beans. Mix in sunflower seeds. Serve hot with Almond Orange Sauce.

To make sauce: Place 1 cup almond butter in a small-medium bowl. Add ½ cup boiling water and mash or whisk until uniform. Add ½ cup orange juice, 2 T tamari, 1 t minced fresh ginger, ½ t orange rind, and salt to taste.
