Couscous Salad
- 3 cups water
- 2 cups couscous
- 1 cup peas, prepared (frozen not canned)
- 1 cup grated carrots
- ¼ cup chopped fresh parsley
- ¼ cup sliced almonds
- 1 t ground cumin
- 1 t dried mint
- 3 T lemon juice
- 2 T olive oil
- 1 t sea salt
- ½ t black pepper
Boil the water and pour it over the couscous. Let it soak, covered, for 10-15 min., until water is absorbed. Add remaining ingredients and mix.
