Brown Rice with Two Sesame Flavors
- 1 cup long grain brown rice
- 2 T vegetable oil
- 2 T lemon juice
- 2 T toasted sesame oil
- 1 cup grated carrots
- ½ cup thinly sliced scallions
- ½ cup dry roasted peanuts
- 2 t sesame seeds, toasted in a dry skillet over low heat
Cook rice and set aside to cool. Whisk together oil, lemon juice, and sesame oil in large bowl. Add cooled rice, carrots, and scallions. Toss to blend. Sprinkle with peanuts and sesame seeds. Excellent with a side of sautéed greens.
