Chocolate Covered Pecans
- 3/4 c. semi-sweet chocolate chips
- 1/4 c. vanilla soy ice cream
- 3 c. pecan halves
Combine the chocolate chips & cream in the top of a
double boiler over simmering water. Stir occasionally
until melted & smooth. Remove from heat. Stir pecan
halves into the chocolate until completely coated. Remove
pecans one at a time with a fork & place onto a
waxed paper lined cookie sheet. Refrigerate for 10
min. to set. Great for gifts or the holiday dessert tray!
