Tofu Cheese Cake

Crust:
1 1/4 cup graham crackers, crushed (approximately 11 full crackers)
5 T sweetener of choice
3 T margarine, spread, or shortening

Preheat oven to 325 F. Mix crumbs and sweetener in medium bowl. Dollop margarine over mixture and stir with fork until well blended. Transfer mixture to 9" pie pan. Press crumb mixture across bottom of pan. Bake until lightly browned, 15 - 20 minutes. Cool completely.

Filling:
1 1/2 lbs. tofu cream cheese
1 box extra-firm silken tofu
3/4 cup granulated sweetener of choice
2 T arrowroot powder
1 T lemon zest
2 tsp vanilla extract

Blend ingredients until smooth in food processor and pour into cooled crust. Bake at 350 F. for 50 minutes, turning off heat and leaving in the oven another hour. Cool completely and chill.
