Sweet & Spicy Pumpkin Seeds
- seeds from 1 medium pumpkin
- 5 T granulated sweetener
- 1/4 tsp. cumin
- 1/4 tsp. cinnamon
- 1/4 tsp. ginger
- 1/4 tsp. sea salt
- Pinch of cayenne pepper to taste
- 1 1/2 T peanut or canola oil
Heat oven to 250 F. Line a baking sheet with parchment paper and spread with pumpkin seeds. Bake until dry, stirring occasionally, about an hour, and cool.
Mix 3 T sweetener and spices in a bowl. Heat oil in a skillet over high heat. Add pumpkin seeds and 2 T sweetener. Saute until sweetener melts and the seeds begin to caramelize, about a minute. Transfer to bowl with spices and toss to coat. Let cool. Store in an airtight container.
