Sweet & Spicy Pumpkin Seeds
Heat oven to 250 F. Line a baking sheet with parchment paper and spread with pumpkin seeds. Bake until dry, stirring occasionally, about an hour, and cool. Mix 3 T sweetener and spices in a bowl. Heat oil in a skillet over high heat. Add pumpkin seeds and 2 T sweetener. Saute until sweetener melts and the seeds begin to caramelize, about a minute. Transfer to bowl with spices and toss to coat. Let cool. Store in an airtight container.
