BLACK BEAN AND CORN SALAD
- 2 cups cooked black beans
- 2 cups cooked corn
- 2 cloves fresh garlic, minced
- ½ cup well-minced red onion
- 1 red bell pepper, minced
- 1 t salt
- ½ cup olive oil
- ½ cup fresh lime juice (3-4 limes)
- 2 t whole cumin seeds, lightly toasted
- ½ cup minced fresh cilantro
- ½ cup minced fresh parsley
- 1 t crushed red pepper flakes (optional)
- freshly ground black pepper, to taste
Combine all ingredients and chill. Allow flavors to blend for at least two hours before serving. Delicious with tortilla chips.
