BLACK BEAN AND CORN SALAD

2 cups cooked black beans
2 cups cooked corn
2 cloves fresh garlic, minced
½ cup well-minced red onion
1 red bell pepper, minced
1 t salt
½ cup olive oil
½ cup fresh lime juice (3-4 limes)
2 t whole cumin seeds, lightly toasted
½ cup minced fresh cilantro
½ cup minced fresh parsley
1 t crushed red pepper flakes (optional)
freshly ground black pepper, to taste

Combine all ingredients and chill. Allow flavors to blend for at least two hours before serving. Delicious with tortilla chips.
