Summertime Celebrations

graduations, weddings, birthdays, reunions – the summer season inspires ample occasions for celebration. And celebrating together is fun isn’t it? But what do we do when everybody’s ideas about appropriate food and drink are in conflict? So many of us are entertaining different dietary needs these days: we’re into Atkins, South Beach or macrobiotics; we’re carnivores, vegetarians or vegans; our foods need to be low-fat, low-cholesterol, lactose or gluten-free.

As no one course of action is perfect for everybody, a practical solution to coordinating large gatherings is to go potluck. When everyone brings a dish or beverage to share, a party is sure to have something to please everyone. A diverse buffet can also accommodate a wide range of tastes. Be sure to label everything well and let everyone build their own sandwiches, salads and sundaes according to their wishes.

So in the spirit of summer and good times, here are some ideas for celebration fare that can be enjoyed by all while also satisfying the dietary and ethical requirements of many of us who shop here at Common Ground…

Vegan Cakes

Standard butter cake and butter cream frosting recipes lend themselves well to vegan (and lactose-free) adaptations. It’s easy, reliable and delicious to use vegan soy margarine (such as Earth Balance) in place of shortening or butter, soy milk in place of dairy milk, and Ener-G Egg Replacer for eggs. If your recipe calls for buttermilk, just put one tablespoon of vinegar in your measuring cup and add soy milk as required. Additional adjustments could include using organic unbleached white flour, substituting whole wheat pastry flour for some of the white flour, and using an organic unbleached natural sweetner. Apple butter or fruit sauce toppings could also be used in place of sugary frostings. Want to top it all off with a scoop of ice cream? Good news -- soy ice creams have become every bit as good and diverse as their dairy counterparts.
